Cashew and Cacao Bliss Balls

Serves: 20-30

Time: 25 minutes

Ingredients:

2 cups cashews

1 cup desiccated coconut

2  tbs raw cacao

8 medjool dates

1 scoop chocolate protein powder

1 cup powdered oats (opt)

Desiccated coconut for rolling

Crushed pistachios for rolling

METHOD:

Soak your cashews overnight or at least 2 hours prior to starting this recipe. Soak your dates in hot water for at least 10 minutes prior to using.

Drain and rinse your soaked cashews. Blitz cashews and coconut in a food processor until finely chopped.

Add cacao and dates (remove the pip) and process until a dough consistency forms.

If you're adding protein or oats, add in and process until combined. Leave out oats if making a Gluten-Free version

Roll into walnut-sized balls and roll in desiccated coconut, or crushed pistachios.

Store in a container in the fridge for as long as a week.
