Chocolate Mousse Slice

Serves: 24 pieces

Time: 45 minutes

Base Ingredients:

1.5 cups shredded coconut

1 Tbsp of your preferred sweetener, I used Xylitol

1 tsp cinnamon

Pinch of salt

1 heaped Tbsp raw cacao powder

1 cup activated or raw sunflower seeds

2 Tbsp coconut oil

2 Tbsp collagen powder

Chocolate Layer Ingredients:

3 medium sized, ripe avocados

200 ml coconut cream

5 - 6 Tbsp raw cacao powder, dependent on taste

2 - 4 Tbsp coconut sugar (to taste)

Pinch of salt

Seeds of one vanilla bean

1/4 cup melted cacao butter

2 Tbsp melted coconut oil

METHOD:

Add all of the base ingredients except the coconut oil into your food processor and blitz until it resembles coarse flour. Add the coconut oil and re-blend.

Press the base mixture into a lined bread loaf tin or container evenly. Pop it in the fridge while you prepare the chocolate filling.

Add all the filling ingredients to a quality blender or food processor and blend until smooth and creamy. Taste and adjust the sweetener or cacao if desired and re-blend.

Pour the filling on top of the base and then place it back in the fridge to set.

Once it’s ready, slice into squares and enjoy! Store in the fridge for up to a week, or alternatively you could freeze half so you don't have to eat it alll in a week...... or you could, I won't judge you ;)

TIPS:

Put a can of coconut cream in the fridge overnight, then it's easy to scrape the cream off the top!
