Fermented Peach and Choc Chip Muffins

These quick and easy muffins can be whipped up in next to no time (30 mins) and are great for a healthy snack or lunch boxes. You can make them GF very easily and also reduce the sugar content if you desire!

Serves: 12

Time: 30 minutes

 

Ingredients:

 

2 cups self raising flour 

150 gm coconut sugar

1 egg

50 ml macadamia oil

250 ml almond milk

4 fermented peaches

100 gm dark chocolate, chopped

 

Method:

Preheat your oven to 180 degrees, line a 12 hole muffin tin with muffin cases.

Add flour, sugar and egg to food processor and blitz to combine.

Add oil, milk, diced peaches and choc chips to food processor and combine (see tips for alternative to fermented peaches).

Pour batter into prepared muffin tin, bake in oven for 20 - 25 minutes.

When cooked, cool in tin for 10 minutes before storing in an airtight container for up to 5 days.

 

Tips:

You can easily make these muffin Gluten Free by replacing the SR Flour with a GF version or you can use plain flour (same quantity) and add 2 ts baking powder as the raising agent.
*Note using plain flour with a raising agent will mean they are NOT Gluten Free, that's just another option if you don't have SR flour on hand.

You will need to pre-ferment your peaches for this recipe, you can search "Fermented Peaches" on my website for the how to, or alternatively you can replace them with any fruit you like, fermented or not.

Fermented fruit contains much less sugar than non-fermented fruit, so if you don't pre-ferment your fruit you might like to adjust your sugar ratio down slightly.
