A delicious, savoury, gluten free loaf.

With the added benefits of green banana flour, this bread is a true powerhouse for your gut!

Green banana flour is full of highly nutritious resistant starch and fermentable fibre.

It is full of Inulin, an excellent prebiotic food which encourages and feeds probiotic growth!

As well as gluten free, this bread is sugar free, grain free and low allergen.

Serves: 12 slices

Time: 60 minutes



220 gm green banana flour

80 gm coconut flour

400 ml can coconut cream

1/2 cup water

1/4 cup olive oil

1/2 tsp bi-carb soda

1 tsp baking powder

1 tbs chopped fresh rosemary 

1/3 cup pepitas

1/4 cup ground flax meal

Pinch of salt




Preheat oven to 180 degrees C.

Line bread tin or shallow tray with baking paper.

Combine flours and wet ingredients in your food processor.

Add the rest of the dry ingredients and combine until a smooth batter forms.

Pour the batter into the prepared tin, bake at 180c for 40 minutes or until cooked through.

Once cooked, cool on a wire rack before slicing.



You could make a sweet version of this loaf by swapping out the rosemary and pepitas with cinnamon and nutmeg

The cooled bread is loaded with resistant starch, great for your gut bugs! (their food of choice)

Spread on a baking tray to make pizza bases instead!
