Orange and Choc Chip Muffins

Serves: 12

Time: 25 minutes

Ingredients:

2 whole, boiled oranges

5 eggs

1 ts GF baking powder

1 cup coconut sugar

2 cups almond meal

100 gm dark chocolate, chopped

METHOD:

Blitz the pre-boiled and cooled oranges in your food processor until finely chopped and liquid. (skin and all!)

Add in eggs, baking powder, coconut sugar, and almond meal, pulse to combine.

Add in chopped dark chocolate last, and fold through.

Pour into prepared muffin pans or a lined 23 cm cake tin.

Bake in a pre-heated oven at 180 degrees for 15- 20 minutes depending on your oven.

Cool on a rack and keep in a container for up to a week.

TIPS:

Pre-boil 2 oranges for this recipe, and let them cool to room temp.

Preheat your oven to 180 degrees.

Keep some extra boiled oranges in the freezer so you don't have to boil them for the next batch!
