Probiotic Coconut Yoghurt

Serves: 300 ml

Time: 5 minutes (+2-3 days to ferment)

Ingredients:

1 tin of organic coconut cream

1 teaspoon live probiotic coconut yogurt

METHOD:

Add coconut cream and starter to at least a 400 ml sized wide mouth jar, screw lid on tightly, shake softly to combine.

Store in a cool dry place on a cloth for 24 hours, this is the fermentation time, so best to put it in a cupboard in your kitchen and set a reminder on your phone to check it in 24 hours!

After 24 hours at room temp, place the jar of probiotic coconut yogurt in the fridge for 3 days.

Remove from the fridge (natural separation is normal), add contents to a large mixing bowl, mix with an electric mixer for two minutes or until you achieve the desired fluffy consistency. Store in the fridge for up to eight months. Enjoy!

TIPS:

You must use full-fat organic coconut cream, coconut milk will not work.

You'll need a starter culture for this recipe so make sure what you buy is as clean as possible and has live cultures on the ingredient list. All you need is a little of your current probiotic coconut yoghurt to kick start your own batch!
