300g steamed & cooled cauliflower (a small head)
200g raw cashews (Soaked for 2 hrs)
200g medjool dates
Approx 300g Dark chocolate (for dipping)
1 tbs maca (optional)
2 tbs tahini
2 tbs rice malt syrup/maple syrup/honey
2 scoops of vanilla protein of your choice
Add the cauliflower, dates, and cashews to your food processor and blitz until smooth.
Add all the remaining ingredients EXCEPT the chocolate and process until it forms a dough. If it's a bit runny you can add more protein powder a little at a time until you have a dough-like consistency.
Press into a lined baking tray and pop in the freezer to "set" (2-3 hours)
Once it's set you can melt your chocolate in a double boiler and then cut the slice up into bite size pieces, dipper in the melted chocolate, and then return to the freezer to reset.
Keep in the freezer to maintain their shape, just be careful when getting them out to eat that you don't break your teeth, they will soften quite quickly though!
Make sure you steam the cauliflower and let it cool before starting.
Also, pre-soak your cashews for at least 2 hours and drain/rinse before using
I used True Protein powder but you can use what you have on hand. Just try for one without added nasties and unnecessary sugars!
